It’s Pancake Day! 🥞
Pancake Day is most definitely our third favourite day of the year, right behind Christmas day and your birthday!
As we love Pancake Day so much we wanted to share our favourite pancake recipe with you. These happiness pancakes are straight out of The Unicorn Cookbook and need to go straight into your tummy!

The recipe makes 12 pancakes and takes just 30 minutes to make.
For the pancakes
- 150g plain flour
- ½ tsp salt
- 1 tbsp baking powder
- 1 tsp caster sugar
- 225ml milk
- 1 egg
- 1 tsp butter or oil for frying
- Gel food colouring (purple, pink, blue, green, yellow, orange)
For the toppings
- Squeeze of honey
- Mini marshmallows
Sift together the flour, salt, baking powder and sugar in a large bowl. Make a well in the centre, pour in the milk, then add the egg and whisk until the pancake batter is smooth.
Divide the mixture between six bowls and add ¼ tsp of different gel food colourings (purple, pink, blue, green, yellow and orange) to each.
You will be frying the pancakes colour by colour so start by pouring the purple batter into a measuring jug.
Heat a frying pan over a medium heat and lightly grease it with a knob of butter. When the butter has melted and started to bubble pour two rounds of the pancake batter into the pan.
Cook each pancake until bubbles appear on the surface, then flip with a spatula and cook for 30 seconds on the reverse side. You don’t want to brown them too much or you’ll lose the colour. Set aside the cooked pancakes on a plate and put into your oven, set to 100 °C, to keep them warm.
Continue with the remaining colours of batter, cleaning the measuring jug in between each. Serve hot with a squeeze of honey, a dash of unicorn sprinkles and marshmallows.
