Time: 20 minutes
- 250g cream cheese
- 250g marshmallow fluff
- 100g icing sugar
- 1 tsp vanilla
- Gel food colouring (pink, purple, yellow, blue)
- Unicorn sprinkles
- Biscuits, for serving
Combine the cream cheese, marshmallow fluff and icing sugar in a large bowl and beat with a hand whisk or standard mixer until evenly combined. Add the double cream and vanilla and continue beating until smooth and fluffy.
Divide the mixture equally between four bowls and add a couple of drops of different food gel colouring to each bowl to create pastel tones.
Add spoonfuls of the coloured mixture into a serving bowl, alternating colours until you’ve used up all the mixture. Swirl the colours together with a palette knife or cocktail stick, then top with unicorn sprinkles.
Serve with your favourite biscuits.
