To give you a taste of The Body Coach’s 15 minute meals, we’ve picked out a recipe from the third book of his Lean In 15 collection – ‘The Sustain Plan‘. This is the perfect treat to turn to when you get a craving for something sweet! So you can get started today with these tasty Chocolate Protein Crepes with Strawberry Sauce. Don’t they look delicious?!
The recipe makes 8 crepes and is recommended to serve 2 people. You’ll need:
- 125g strawberries, quatered
- 1 tbsp runny honey
- 110g plain flour
- 2 scoops (60g) chocolate protein powder
- 2 eggs
- 325ml almond milk
- 1 tbsp coconut oil
- a little cocoa powder, for dusting – optional
‘Drop the strawberries into a small saucepan and squeeze in the honey. Put the pan o a medium heat and cook for about 10 minutes, or until the strawberries take on a sauce-like consistency.
While the strawberries are simmering away, place the flour, protein powder, eggs and almond milk into a food processor and blitz until smooth.
Melt a little of the coconut oil (1 tablespoon should be more than enough for all the pancakes) in a medium non-stick frying pan over a high heat. Pour in a ladleful of the batter and immediately pick up the pan and swirl the mix to coat the base of the frying pan.
Fry the crepe for about 1 minute before flipping and frying for 1 minute on the other side. Don’t worry – the first one is always the worst!
Repeat the process with the remaining coconut oil and batter. I like to fold my crepes into triangles and pile them up to be topped with a dusting of cocoa powder and the warm strawberry sauce.’
